红茶自动化加工技术规程
1范围
本文件规定了红茶自动化加工的术语和定义、基本要求、工艺流程、生产线设备配置、工艺参数与
操作要点、质量管理。
本文件适用于湖南省条形红茶自动化加工。

3术语和定义
下列术语和定义适用于本文件。
3.1
红茶自动化生产线blackteaautomaticproductionline
通过传输和智能控制设备将萎凋、揉捻、解块、发酵、初烘、足干等条形红茶加工设备进行连接而
形成的条形红茶生产线。
3.2
红茶自动化加工blackteaautomaticprocessing
以适制品种茶树鲜叶为原料,采用红茶自动化生产线加工符合T/HNTI02要求的条形红茶加工。
4基本要求
4.1鲜叶
要求芽、叶新鲜、匀净,无污染和其他非茶类夹杂物。
4.2鲜叶运输
应符合GB/T31748的规定。
4.3加工条件
应符合GH/T1077的规定。

5工艺流程
鲜叶→萎凋→二次萎凋→揉捻→解块→连续发酵→初烘→风冷→摊凉→足烘→风冷风选→摊凉冷
却。
6生产线设备配置
6.1组成
生产线主要由鲜叶处理、萎凋和揉捻做形、连续发酵(带温湿自控)、动态初烘、足烘提香五个模
块组成。
