前言
本标准规定了食品中大肠菌群的快速检验方法。本标准规定使用的培养基MUGal肉汤中的4一甲
基伞形酮-3(-D一半乳糖昔与美国联邦法规40,第141节,21款(CodeofFederalRegulations40,Part
141.21)规定的检验大肠菌群所用的MI琼脂的主要成分(4一甲基伞形酮一件D一半乳糖昔)是同一物质。
本标准关于大肠菌群的菌落计数,参考了ISO4832c1991(EA微生物学—大肠菌群菌落计数法
通则》(Microbiology-Generalguidancefortheenumerationofcoliforms-colonycounttechnique),
本标准中的附录A是规范性附录。
本标准由国家质量监督检验检疫总局提出并归口。

引言
大肠菌群系指一群能发醉乳糖、产酸或醛,并产生各半乳糖昔酶需氧或兼性厌氧的革兰氏阴性无芽
抱杆菌。该菌主要来源于人畜粪便,故以此作为粪便污染指标来评价食品的卫生质量,推断食品中有否
污染肠道致病菌的可能。如果大肠菌群存在于食品中,表明未作有效的消毒处理、加工后保存条件不良
或消毒后又受到污染。快速检验这些细菌,有助于食品的卫生管理,维护消费者的食用安全。
